InnerFight Podcast #139 Kale Tabbouleh

Tabbouleh is a popular Arabic dish, traditionally served as part of a mezze. Variations of it are found also in Turkey, Cyprus and Armenia. I'll admit it's pretty good for you as it is, so I'm not reinventing the wheel here, however I have changed up a couple of things which take it from healthy to super salad. I've removed the offending bulghur wheat and replaced it with raw cauliflower and pumped up the greens with the power of kale.

InnerFight podcast #137 Lamb kofta kebabs with Tahina sauce

I adore Lebanese food and I'm very lucky to live in a city where there's an abundance of good Lebanese restaurants. However, nothing tastes as good as a lovingly prepared home-cooked meal, so here is my healthier version of a popular dish. It teams nicely with my kale tabbouleh. InnerFight podcast #133 Fudgy Zucchini Brownies

Yep, that's right zucchini (or courgettes as my fancy pants husband likes to call them). This humble little squash keeps the brownies super moist, and for those of you that are parents, it's a cheeky way of sneaking some extra veg into a treat. They got the thumbs up from my 3 year old nephew today. Winner.

InnerFight podcast #131 Lamb Harira Soup

I first tried this delicious soup on my first trip to Marrakesh over a decade ago, and it is something I have eaten on every trip back since. It is a filling Moroccan soup, traditionally eaten at the break of fast in Ramadan. It normally contains chickpeas or lentils or a mix of both, but I have substituted these ingredients with a mountain of veg! The spices create the same awesome Moroccan flavour and teamed with the lemon juice and dates I don't think you will miss the stodge for a second. Ra...

InnerFight podcast #126 Sweet chilli sauce

Sweet chilli sauce is a bit of a staple that most of us would have in the fridge. This Paleo version can be knocked together in 15 minutes, is free from all the nasties in the shop-bought variety and will keep for a month. It will add a bit of oomph to otherwise plain grilled fish or stir-fried veg. It's also fantastic as a dipping sauce. Feel free to try this with garlic instead of ginger, or add some garlic along with the listed ingredients. Makes approximately 2/3 of a cup.

InnerFight podcast #123 Cajun Chicken

This has become a bit of a favourite go-to, midweek meal at our house. Not only is it reasonably quick and easy to knock together, but any leftover chicken makes a fab lunch the next day in a salad or a lettuce wrap. This one has a bit of a kick to it, so if you're not a big fan or it's for the kids, just add less cayenne and white pepper, problem solved.

InnerFight podcast #120 Dukkah Lamb Fillet

I first tried dukkah many moons ago on a holiday to Sharm El Sheikh with my mum. This Egyptian nut, seed and spice blend has become very popular over recent years with trendy cafés and foodies worldwide, and there are loads of ready-made varieties on the market. But why buy ready-made when it's just so simple to make? You can use any nuts you like, try pistachios, cashews or almonds. Pine nuts would also work well. You only need half the amount listed here for the 4 lamb fillets, however I alway...

InnerFight podcast #114 Sweet potato and chorizo frittata

Sitting at the breakfast buffet in Barcelona eyeing off the traditional Tortilla Espanola, I contemplated whether it would work as well with sweet potato. Obviously as soon as I arrived home I gave it a shot. Then it dawned on me, why just stop at two simple flavours of egg and potato when I can really pump some taste in there with a few more ingredients? You will need to use a frypan that goes from the cooktop to the oven. I used a cast iron skillet that was 30cm in diameter.

InnerFight podcast #109 Baked Salmon

Packed full of Omega-3s, vitamin D and being good for your joints (due to the calcitonin), salmon is a fantastic choice for your meal. I know, I know, I hear you, fish can get awfully boring too. So it's HP to the rescue, saving you from another bland fish dinner. Pesto is super easy to make, and I have several pesto combinations in my repertoire that I will share with you guys in future posts. InnerFight podcast #106 Mango Chutney

I walked past the little fruit and veg shop at the end of my street yesterday and he had fresh little Alphonso mangoes out the front, begging me to take them home. Of course I couldn't resist! Being mad for condiments and sauces, I set straight to work turning them into chutney. I made this with the thought of it being a yummy side for a curry, but after tasting it, I think it would be awesome on some grilled fish or chicken too. Don't be daunted by the thought of making your own chutney. It's a...
