Denver’s never had a ton of great options to eat out late at night — even on Colfax, where hundreds of hungry concert-goers and bar patrons pour out onto the sidewalks after last call. Ever since the pandemic, Denver’s night owls have been left hungrier than ever. But a couple of recent announcements offer a glimmer of hope: Rosenberg’s Bagels is opening a new late-night slider pop-up, and Little India on 6th Avenue is going 24/7.
