Roman is a Dutchman who was born in Brussels, but he studied for many years in London. After completing his studies, Roman began brewing part-time in 2014 on a farm near Ilford. Vault City was launched in 2018 by Founders Steve and Johnnie in Edinburgh, who started out homebrewing on the kitchen stove, before evolving to produce 400l batches in the basement.
