Tomeka Wallace opened Happy Cafe with exactly that, but her ability to learn as she goes, pivot when needed, and “just roll with it,” as she says, led to many changes to her menu and her operating hours. Listening to her customers and reviewers gave her new ideas, has expanded her offerings, and is one of the keys to the success of her beach town sandwich shop.
