Episode description

Marco Canora is a James Beard Award-winning chef of Hearth Restaurant in the East Village of New York City. In addition to having an award-winning restaurant, Marco is also the founder of Brodo, a bone broth company. Marco started Brodo from his tiny take-out window outside of Hearth, and it became a mainstay in the neighborhood.

We discuss Marco’s career through the culinary world of New York City, as well as how he created his company from scratch and scaled it as quickly as he has.
