The American palate just wants crispier and crispier things, and I think that really speaks to where we are right now with home baking, with making pizza at home in American kitchens. a lot of opinions and plenty of tips and tricks. Maybe you've done the toothpick test, which I sometimes think is not as reliable as you want it to be. But what I look for with doneness is like a cake that's sort of pulling away from the sides of the pan. Pizza is as much if not more so about the dough.
