I thought we'd kick off 2022 by celebrating the joy of eating meals together (hopefully something we'll do again at some point this year!?) and zooming with Chef Eric Huang, founder and executive chef of Pecking House. As the former sous chef at Eleven Madison Park, Eric's "Nashville-Hot-Taiwanese-Fried Chicken" is now one of the New York Times' Top 10 NY Dishes of 2021 will set-up permanent shop in Brooklyn later this year. We discuss: How he cut his teeth in the culinary world, the power of consistency in fine dining, celebrating the uniqueness of Chinese-American cuisine, the "secret" sauce of restaurant success (spoiler: logistics), and how a few happy accidents helped Eric lay the foundation on which his "chicken church was built!"
