Craft chocolate companies in Australia have almost tripled over the last six years - from 12 to 34 manufacturers.  They are a small but growing group of Australian chocolate makers with a passion for carefully curated small-batch, sustainable, craft chocolate.

 

We’re joined by Brett Holmes from Two Lost pilots; and Chris Brown from Bean Bar You

 

It is within this emerging "bean to bar" industry that craft chocolatiers are able to control every aspect of the chocolate-making process, from the flavour profile of the cacao beans, to the intensity of the roast, to the composition of the final product.
