You will need: 2 Tbs Olive Oil 2 cups White or brown rice 2 1/2 cups water OR chicken OR vegetable stock 1 large onion, diced 3 stalks celery, diced 3 medium carrots, diced 2 cloves or 2 tsp garlic 1 can black beans, drained and rinsed Optional: dash of liquid smoke, 1 package kielbasa (diced) You start in a large soup pot with a basic mirepoix—so a chopped onion, 3 diced carrots and 3 diced celery stalks. Heat a few tablespoons of olive oil and add the chopped veggies until they just begin to soften. To that, add some chopped garlic, and when it speaks (the garlic will "talk" to you in the oil), you’re gonna add 2 cups of dried rice. Let the rice begin to cook, and then pour in 2 ½ cups of water Or chicken stock. Cover it and give it a few minutes, then drop the heat down to low and cook until the rice absorbs all the liquid. Turn off the heat. Then add a can of drained black beans, a dash of liquid smoke, and if you have meat-eaters in your house, you can add chopped kielbasa. Mix gently to combine, cover to allow kielbasa to warm through. Enjoy! Let me know if you try it by taking a picture and tagging me!
