She talks about how physical stamina, strength, long life, and overall good health had been attributed to dietary dependence on whole grains, particularly wheat, in times of war. She shares how the new whole refined grains made a significant contribution to the increase of diseases and how, during war, mills were forbidden to separate the bran and germ and were not allowed to make white bread.
