Pennycress is a promising crop to gap the off-time between soy and corn during winter. Pennycress withstands cold climates and offers a new way to sustainably protect soil from erosion while at the same time containing commercially valuable oils. Having presented the work on the blog, we had the chance to talk to Ratan Chopra, researcher at the university of Minnesota, about his work domesticating pennycress.
