Today we are joined by Forage Agronomist and Ruminant Nutritionist, Dr. Peter Ballerstedt. His main message for us today is simply this: there is no sustainable food system without ruminant animal agriculture. Ruminant animals (like cows), have gotten a bad rap (from an environmental and a dietary perspective) for a long time, but Dr. Ballerstedt is here to show us the facts—and those facts run quite contrary to the popular perspective. We discuss no-till farming, cover crops, and the importance of soil health, all the while making connections between these agricultural topics and human health/general well-being. We also discuss the contention that, from a food-ethics perspective, the lowest possible amount of organisms are harmed by human agriculture (all things considered) when people eat large herbivores.
