In today’s episode we re-do our interview since our last one disappeared. Chicca graciously joined us for the second time and we learned new things! Chicca is originally from Naples and was an architect before buying and restoring her current home in Tuscany. Now she offers cooking classes from her home kitchen with help from her husband Arnaud behind the camera and Jedd and Michelle of IntentionalTravelers.com who are the moderators and help manage the cooking classes. We talk about her cooking club and she gives us tips on some local wines to try: Sassicaia and Ornellaia. We will plan to make it out for a visit so we can try as many things as we can! She explains what the difference is between Extra Virgin Olive Oil and Virgin Olive Oil. She always looks for the IGP label (Indication of Geographic Protection) which ensures the product is locally harvested and produced.
