I'm all about repurposing left over's for another dish & I learned a way to use all the left over french fries that your kids do not eat after eating take-out (& spending a gazillion dollars)

 

Step 1: Take home left over Fries, store in a large ziplock bag & place in the freezer. (You can also utilize frozen store-bought fries)

 

When you're ready to make the French fry Hash:

Ingredients:

Chopped breakfast meats (bacon, ham, sausage)- 4 bacon & 4 sliced ham

8 Scramble Eggs

Chopped frozen fries (we used a quart size bag of fries)

oil to pan fry (1-2TBs)

Seasoning to Taste (salt, pepper, 21 seasoning, green goddess or garlic butter)

Additional Toppings or Add-ons: Shredded Cheese, Sour cream, veggies

 

Instructions:

Fry breakfast meat in a large sauce pan or wok. Once browned, poured in eggs. Stir and toss until eggs are cooked.

Remove from heat and set on side back into bowl used to scramble eggs

Add oil & fries. Toss until fries are heated and crispy.

Add back in scrambled egg & meat mixture.

Mix thoroughly & serve!
