yeah, we didn't do an episode last week. I got busy with life and everything else. And I know Kyle had craziness. We'll talk about that, but let's get started here with the big thing that's happened since our last episode. Kyle has opened officially Birds and Bones bro in Florence, Arizona. I have yet to make it out there. Yeah, thanks for me both of you showing up. Well, here's the deal I thought about on the very first week last weekend. I could not go on the very first
weekend. Judging by your Instagram, I don't think you needed any more people there. And kudos to you all the flowers. I mean you gotta tell us about it, and it sounds like the opening was ridiculous with a bazillion in one people. Bro huge tell us about it. So, okay, so I've been well, naturally, I've been kind of training the staff right about you know, the menu and this and that. We kind of did the deal and then we had like a big meeting and did you did you
host the meeting? I did host the meeting. I had Koffini there. So Koffeini is HR. I'm the cook bro, I cook, I train, I do all that. I don't want anything to do. This relationship is perfect and we'll get into this because he is the paperwork guy, the orders, the bs, all that junk. I want zero to do. I just want to cook. That's all I want to do. Okay. So that's where Kuffeini pops in and he does all that. So he's also HR because I have said some choice things that I probably shouldn't have said,
and we would and he bull speak to the side. It's like you probably can't say that, but thank god, I have a awesome rock star of a freaking team. So we have this meeting, okay, and they're all like, hey, you know, maybe we should do a soft opening first and work out some bugs and this and that. Everyone's like, yeah, we should do a soft open. I fed them the entire menu and I looked at him, excuse me, Beryl, I said, fuck, no, we're opening the doors. And they all like looked at me like,
okay, smart move, was it? Well? So let's see that night Thursday night, I got the food on. I'm just jittering. I'm looking around like everything's perfect in the kitchen. I'm like, all right, we're gonna be all right. Just think of it like a food truck, like we're good. Order in order out, order in order out. So I of course did not sleep at all that night. I couldn't say. And
I'm sleeping at the freaking restaurant. I got a cot right next to the damn smoker that I'm you know, because now the smoker is completely filled. Bro Like, I've never I've cooked on the thing a thousand times. I've never filled it with like, say, fifty pork buts fifty racks of ribs. I've never filled it all at once. And I'm thinking, Okay, things could be different, things could blah blah blah. I don't know I'm in my head. I think too much. So you know, we we
you know. The next morning comes and we're getting things going. Life's good. The cooks show up, they're prepping everything, blah blah blah. I start seeing people out front, and I'm like, what the fuck? You know? So I kind of go out there and I'm looking and there's a line starting to happen. Bro. It's like seven thirty. We don't open un till ten. So I'm like, okay, so whatever blah blah blah blah blah blah blah. Now we're at like nine fifty and I'm freaking out
and I'm going around and I huddle the team up. I felt like Dak Prescott, bro, like you know, Dak Prescott gets in the huddle. I wouldn't. I wouldn't say that. Yeah exactly, yeah, Bro, I plump everybody. I'm getting everybody jacked up, right. So how many you do? Bro? How many finals? Let me tell you? So? Okay, So now it's ten o'clock and it's time to open the door. So I opened the door. I see this line, and I have this line, bro. I had this emotional roller coaster going on. Did
you cry first? No. First, I'm like, well, not cried, like I was like tearing up, like shit, like all these people. There's people from Kansas City that flew out here just for this. There's people from all of the like my boys from like high school, like bro crazy craziness in line. Then there was a bunch of people that like, uh like supported me on like Facebook, that I ever really met in person,
that like from Florence and from like all over. Ok hey, we never met, but we talk on Facebook or you know, social media all the time. So I'm freaking out. And then so like a little teary eyed. Then it's like shit, what did I do? Like did I screw up? Did I should I have quit at my job? Because I'm like freaking out. So I go up and down the line. I'm slapping people's hands and there was I counted sixty seven people in line at that time.
Now the restaurant only we only have thirty seven chairs, so all these look like you have table in the back for it. Oh oh ok So the day before we're opening, Okay, the day before I get a call from the city. City calls me down and I have to go to this meeting. This is uh here, the good, the bad, and the freaking ugly. City calls me down and they will not give me occupancy for the patio. And I said, well why, And they pulled out all
these books of different chapters of different codes that need to be done. So I'm looking at I'm trying to read. I can't understand. Gibberis bro I'm reading this thing. I'm like, okay, well that's done. Everything's done. And then he pulls out another book and he's like, well, you're gonna have to hire an engineer or an architect two have stamp of approval to sign off on the sign off. But I got you on that, right, Brody, I got I got, I got architects, engineers, that
a stamp everything you know, I pulled permit. It's all day for the Yeah, well we're gonna s what you built, all that you built permits. No, I had all the permits. I had everything, barrel, I had everything. Everything's ready to go. I got the umbrellas up. I'm it's ready to go. I just need to barrow. But barrel, that is. I'm me as a project manager, construction project manager. That's what I didn't tell you that because you didn't have an architect or engineer to
build that patio. So is it illegally built? No? It was not. I had I had all my permits and everything. Who the who pulled a permit? I think I did? Me or Caraffini. Then we had to have you have an r o C. That's yes, that's a record you. Oh so you have a contra. Let me just get it before you start asking me all this damn questions. I got permits, I got a restaurant, But you didn't pull a construction permit to legally build that patio, Phil, Yes, I did because I had to post it because they're
all over me. I had to post it on my back patio. It had posted what No, yeah, exactly what r o C? You know what ro O C is? Registered of contractor whatever? Yes? What number did you use? Whatever? The guy's r O C is, Phil, I don't know. I don't memorize his number. I don't know. Anyways, So he's like this, this, and I passed everything. He's like, well, there's a handrail in the back. He's like, well, I want hoops put on this handrail so if somebody's in a wheelchair they can
be able to grab these hoops and pull themselves up this ramp. So I said, okay, so I called my no disrespect to the disabled, No, this is but listen, it's ridiculous of what they make you go through to do that, because even this, but but but what person disabled is going to pull theirself up on a stair with hoops to go into a barbecue restaurant right now? They got me, They got me by the balls, and I couldn't say anything. So it's like, okay, I'll get that
done. I called my roc. He showed up and I said, look, I need hoops here. I don't care what it looks like. Just get it done. And he zipped it up. He got He spent all day getting it done. Boom done, perfect, go back. Now he wants a time, a physical time of how long it's going to take each individual person sitting in those chairs outside in the patio, how long it's going to take them to run out of an emergency gate if there was an emergency.
And I said, okay, well hold on back to the fire department. No, this is the city. You got it, Yes, we do, we do have it. We'll talk offline, Brodie, because that's not that's not what they do. So and I was like, okay, are they are they old? Are they overweight? Are they in shape? Are they kids? Are they disabled? What am I doing? He's like the engineer or architect that you hire will have that and they need to be
stamped and he will have the time and all that. So I we flipped out, right, So fine, patios closed, boom, patios close. Now we go get our We try to go get our alcohol. Right, So on our alcohol they spelt out barbeque instead of BBQ, so the paperwork didn't match up, and they said, uh, sorry, that's not what the name says on your liquor license. And I was like, so what does that mean. He's like, well, you have to reapply. So now we we had to hire. We got a guy and he's like,
look, all you gotta do is your fingerprints and do this again. Blah blah blah blah blah. We'll have it to you in like two weeks. So that was the start of the perfect storm, right, So fast forward to Friday. A question, go ahead, why did you wait until day before to get your liquor? Well it was like Wednesday, Tuesday, Wednesday, But why wouldn't you have gotten your liquor? Like where were you getting your liquor from? Do you have a distributor in Kingsley or king Hensley?
Hensley? But why didn't you place your Hensley ahead of time? Well, because I was just going to pick it up because I didn't want all this crazy alcohol. I just wanted I just needed Beers. That's it, Beers Youngstown. You shouldn't have put you through that. Hensley will because they do stadiums and they deliver it. Yeah, they they're strictly by the Lord, if you correct. I learned you got a brodie that goes through all of this, and you didn't even call me. You called me on some pos
book. Okay, so po piece of shit, right, but you called me on pos bullshit, But you ain't called me on the construction part or how to get around that pot My life and I know you understand this. My life is one hundred and eighty. I am all over the place of this. Can't can't Can I have an apology then? Because okay, sorry, Phil, I'm gonna call you after this podcast though, so I'll speed it up. So mixed emotions open the door. I'm slapping everybody's hands.
This is Friday, and I'm so jacked up. But then I get this, Like what did I do? Like is this? Like? Now I'm freaking out, Like the food better be good. This that I'm freaking out. So I get to the back and, you know, get with the cooks. They said, let's whoop some ass, you know, let's do it. So we started going dining rooms full and uh, now everybody else in lines will like, screw this. I'm not I'm not waiting for dining. I'm going to uh order to ghost. So to ghost came in,
dining came in, and it flooded the kitchen. I mean we were absolutely flooded. There goes another Yeah, and the sugar poster fell off the one so so that just totally clogged the system. Man. And it was it was. It was rough, and so it was good. It was a good opening. It was the food was good. There was a lot of kinks. Everything that could go wrong went wrong, but we figured it out. We got everything going, and I learned that I needed more than one
busser. I had one busser on staff, and he worked his tail off for sixteen hours bro sixteen hours, and I kept you know, I didn't think I didn't. You know, it's the little things you don't think of. I didn't think I needed a second busser. I had the I had the wait staff figured out they were switching shifts, and I didn't think I needed two other cooks. But you know, I worked those guys for sixteen hours and then they got a clean and they're hating me, and I'm just
y know, Look, look, busses, Brodie bussers. You got a young kid, or you got like an older young guy. You need you need, You need a rough somebody who's been through a ringer in life, and them sixteen hours really mean something to them because they will bus do you have a pushcart? Like he could throw everything all right, so yo,
they throw everything, postcard, they spray everything down. But you can't have a nonchalant teenager busser because that's your that's your replacement, right because you need to turn stuff fast. So you need somebody who had like a I'm not saying a nice characteristic individual. Let me just say this that feels important. The kid is a rock star, like he stuck it out with me. He was he was cool, he's he was totally fine, he busted his busted, but no he did good. Bro. I didn't have to try.
I mean, yo, yo, I'm talking about the busses that'd be like, oh yeah, just get there, just get there. So after that, you know, I apologize to the whole staff and I was like, you know, we're sorry, Like you know, oh, that was weak. That was weak. It was your decision not to have a soft open. And what they all suggested, well was like, yo, we should do a soft and I'm like, screw that. Open the doors, let's just let it ride. That's exactly what I'm telling you. You were
the only one that was in denial that you should have alf opening. But now when you invite it, and when you stalk into your crew, you said, oh we I'm sorry we didn't now is we right? When did Kobeni jump into the Wii? When you said, oh, we have each other's backs, it is what it is, Okay, we both took it on the chin and I totally understand that, and I apologize to everybody,
and you know we we yo. Look look you just bro. It's like the little things too, you know, and like how anybody like I know you how you ran a restaurant all by yourself is totally one and I respect anybody that could do it. It's totally beyond me, bro, Like that is major. That's what we're talking. And you know what it is.
It is like you feed like you are right. When you feed in off your passion right and your dream right, then you you love cooking your Your biggest thing that day was to give your food out to the public and make people love you know what I mean, want to love it, love it and you know what I mean, and start this thing. But all of the other stuff that you mentioned is not part of your business plan. That just pops up and it's gonna be a lot more during the first year.
And you just know your Brody's here for you. Guys. It could be anything. I guarantee you I went through it, bro. Yeah, you know, it just blows my mind. Sorry, bro, it's just so how to go. So it was fantastic, It was absolutely it was absolutely
could I sold out every day. And see the problem is, you know when you do like festivals, like I'm so used to doing festivals on my food truck, and you don't know how much food to honestly bring or honestly cook because you know, the promoter could say, oh, there's gonna be thirty thousand there, well maybe a thousand show up to your you know, your food druck or whatever. You got a ton of food. So we don't have the data that says, okay, Fridays are crazy, Saturdays are
okay, Sundays are crazy. You know what I'm saying. So we kind of had to just you know, shoot for the stars and thank you know, thankfully we sold out every day, but it was you know, it was fifty racks of ribs every day. It was just we just didn't have that data. But we're getting better and it was an absolutely it was amazing. It was amazing, and I've never worked so hard in my life. But it still feels like it still feels like I'm on vacation, bro,
Like I never really quit my full time John. All Right, See, I don't even know what I could say and can't say. But what now, you know what I was going to say? This something pop But welcome to the restaurant world. Like I absolutely love it, like I absolutely love everything about it, and like every day you gotta do. There's no days off. By the way people say that there is absolutely zero days, none, none, and your nine to five turned to twenty five, twenty seven,
twenty four, twenty four. No, I knew what it was, Barrel. I'm just letting you know there's extra hours that you got to put on that when you're a restaurant owner and and and just be glad you got partners. And you know, I've seen Pops in there. Tell me what pops. Pops got busy, Pops got work, dizzy working, Bro, Pobs got me working. You know, it's like, you know, my brother and sister, everybody was there. They're like ready to help, but
like they didn't need to help because the staff. You know, I had everybody. We had the staff for everything. And it was good. It was it was freaking good, bro. And it just blows my mind that I am now doing this. It's still it still feels like I got to go back to work full time Monday morning. But you know, like last Saturday, last weekend was my second weekend. Things ran smooth, bro, Things were great. Things were you know, I mean, we were turning.
I'm talking to the customers. They all want to take pictures and this, and asked me questions about all the pictures on the wall and all kinds of stuff like that, and so it was I I give anybody props to that opens the restaurant, and especially if you're doing it by yourself, you are I mean, that's a that's a salute because I there's no way I could I could do this without without having cooffeini because I'm not dealing with paperwork. Bro, I can't do it. I can't do all that. And
then you know, sorry, I'm going on a little round here. Saturday, this past Saturday. So Friday night we ran out of food and then Saturday, you know, so I pulled an all nighter Friday. I am way too old for this, by the way, pulled an all nighter Saturday, had everything cooked, done, ready to go. Boom. Now I'm playing, uh, what is that? What is that? Kolbert? You played all the dishes? I played everything. There's a name for it.
And I got a cook. All my cooks are awesome, but I have one that is an absolute rock star, and she throws out all these I feel come on the Bear, the TV show The Bear. I feel like I'm in that because they're throwing names at me and this and that, do this, do that and I'm like, yes, yeah, yep, on it, on it. Then I get the yes, chef, hey, chef. It was great, and I'm like, I'm not a chef, I'm a pitmaster. That's it please. But it was brought Anyways. I
could go on about this all damn day. It was fantastic. Everything. Life's good. So things are better week two. Yeah, and what days are you open to doing? Right now? It's only Friday through Sunday right now, eight or ten to ten to eight, and then next week we are going to do Thursday through Sunday ten to eight, and then probably sometime in April, probably Country Thunder weekend, we are going to do the official
Wednesday through Sunday. And that's it, okay, because it's just there's just so much prep work here, bro, Like we do everything by hand. Like we just got done trimming I don't know, probably fifty fricking briskets, and we're cutting potatoes, we're boiling noodles. I mean, we are everything that's just going to get oh real quick. You're gonna look, you're gonna start looking for shortcuts. Not saying no, listen what I'm telling you.
Barrow said it Yo, not saying that that has to devalue what you're delivering. Your quality can still be the same. But you're bad, yo. Look even the boiling potatoes, right, you know your food distributor. We ain't even talking about food distributors. Bro Okay, all right, listen, let me just tell you. I'm glad you got you know, wide open all on your first week. I was so excited and the only reason why your brother wasn't there even though I was the first person out the crew to come out there, so I already been there but before it was officially open. I was like, yeah, I'm gonna pick up Sonny. I'm on my way too, and
she was like yo, I thought she had a little head cold. And then she got dressed and got ready and then she started blowing in those I was like, Yo, we're going to see family. People gonna be hugging on you. We can't go up there like that, even though we excited. So she was very disappointed about it, but we definitely come in.
And then you know, I had some guests this weekend from Australia. We'll get into that later, but I was just so happy, man, of your accomplishments because yo, once once, okay, once that official, official feeling happens. Now now now you're good, Brody, Now you're good. Just sit back. Understand you're going to make mistakes, but understand it might be not even a mistake, something you didn't know. Right now you know

of the line. He's like, I've never seen anything like this. There was at one point there was a hundred people in line to get in just to I mean, just to come eat. I mean this whole community though. I mean, it was. It's absolutely mind blowing, Bro. It was. It's it's it's absolutely crazy. That's happy for you, Brodie, let's go. Let's go, cop Man and Caddy. I was so happy for you. Like I said, I wasn't gonna go up there without Son. I'm kind of glad you guys didn't come because it was chaos. Bro,

was. And then my dad looked at me, He's like, what is wrong, Like what's going on? I was like, I just need to go sit down, have some water. And like it was. It was just and then you know, then we had to talk like, hey, like you can't do everything, like you you have to let these guys do it. You've trained them this. You know, training is never gonna stop. I'll always be in the kitchen. But it's like, you need to let these guys learn, you know, you need to let them do their
thing. But it's tough, Bro. It's your own product that you're You're putting your stamp of approval on it, and I have to let that other people trust. I gotta trust other people to do that. What's I do? I get my team. The people we have hired are insane, Bro, they are They're all rock stars. It's fine, It's absolutely amazing because that's the thing I was worried about Bros. Employees and this and that. You know, I've heard the horror stories and all that. So far two
weeks in, Bro haven't had any issues. Zero. Good well, good, good, good, good good. I'm happy, Brody. I'm happy for you, Yo, Kyle, You're my brother, man. Yo. Would be a week ago Wednesday. I didn't do anything. I was in bed on my birthday by like nine o'clock. I didn't do anything. And then the following that weekend, the following weekend, uh, NASCAR was in town. So it was with somebody's mind doing that.
But I kept it kind of mellow. This year kind of stripped it down a little bit for the spring race. But I didn't do anything really last week. Why was you about to get married or some ship? You found a good swipe? Right? Oh? No, I slowed it down, I said, slowed down. Oh, I'll tell you the reason I slowed
down. So it's weird, like there's been there's been some things like I don't know, there's been like things in life recently that I've just been kind of like, uh uh no, you say, like you know, one of the things that happened. We talked about it here briefly when Toby Keith died. I remember texting my dad after that that morning and be like, damn, it's crazy, like Toby Keith died. And my dad wrote back he said, yeah, he's like and he was even younger than me,
and whatever reason, I just like stuck with me. Toby Keith was younger than my dad. Oh, And my dad said that, And it's kind of like rang in my head, and I think of myself, going, man, I can throw the biggest, baddest parties in the world, Like I mean, I've thrown some ragers, yeah in Vegas, all this shit right, and I'm like, you know, I need to slow down and appreciate the finer things with family. So I did. So that was what
I did. This past weekend. My dad and I went to the race and we met up with friends, but it was just he and I basically like we went out third. We had some friends over to his house Thursday night for dinner. It was nice. Then Friday, he and I were there all day. Saturday all day Sunday all day and yeah we ran into people, but it was he and I and it was like we just kept it us. It was not the chaos and everything, and it wasn't the big party and everybody's like, oh where is it. I'm like, it's
not this year. And the reason why is cause I was like, you know, I throw those big old parties and you have my dad's there and you know we have we have fun there. But it's like, you know, I just I needed it that weekend, need that time to be like it's him and I. Yeah, you know, make those memories and be like just slow down, silence, all the noise and the craziness is taken in. So that's what I did last weekend. But then I mean,
now we're I mean my world. I've got a festival this weekend. I've got our smoke show, which I tried to get you guys be a vendors in. But all of that, Brody yo yo me. Now let's drop the tongs because I want to know more about this because even my bro he called me Smith Dogg called me on this is this the one in Chandler, No, this is the one in Gilbert, the one in Chandler is not
our events anymore. And and here's what I heard too. It was like, yo, they said they canceled, uh Mike Ryman and he wasn't doing it or whatever. But I saw I'm not sure. I don't have I have no knowledge of any of that. I just know that we're no longer working with that organization. We have a different group of working with and this group's out of California. And I think that there was a little bit of maybe growing pains in the first one. I mean, I try to get
you guys in there. Obviously it didn't work out for the reason this one. But no, the Chandler one were not a part of. But the Gilbert won, this one's Gilbert. We got that event on Saturday. I got a wedding this week on Friday, and then yeah, right, and then the following weekend, the following weekend we got another show, and then it's Easter, and then we come back the first week in April. It's like the next like six weeks are wide at It's a great it's a great
thing to have. It's a great time. I mean, plus we got another secret show coming up. So that's where I was from hold out the grill, the grill and Kyle Man going to the sea. That's what I'm saying. If you guys want a pair of tickets, I'll happily give you guys a pair of tickets. Well, no, no, Parel, that's not the deal. The deal is if it is somebody like, oh, I know you can't say you're so oh like now, this is how I

And it's funny you even bring that up. I guess I've I don't know, something's come over me so far this year or maybe like the past six months. I've just gotten to the point now where I'm just done trying to make people happy. And I really I'm not because he out hear

So I'm not taking much of it, you know, I barely report whole on. Hold on, you're not thinking much of it. I think we talked every day last week about what you
don't play it off? Hold on, hold on, hold on, let me let me figure. I'm glad you said that good. Don't play it off like it was about, because we talked about now here here was the deal. This is what I read, right. It was a real rib competition and we was turning in ribs and the three categories. One you had to use something infused and with kilt lifter. No it actually at first it said one of their beers, right then it turned out to be kiltlifter.
The other contest was just a regular turn in on ribs, right whatever the best ribs on the table was. It was an open rib category. How I felt, you know, coming from you know, competition. Then the other way you could have won was uh, people's choice. So if you got the most tokens and people's choice, you are the one. So I'm yo. So Friday, we have to set up by four. You know, Phil ain't set up ship right, so because I got pictures of it, yo, Yo, so daddy Dad did goes it, says Yo,
Phil, what time? I was like, yo, I gotta go do fill the builder and ship and then I'm gonna come catch you or whatever you know. Hit me at the house was like one o'clock. So one o'clock He's like, Phil, I don't have a car. I gotta get picked up. So I go all the way to Wadell go get him or whatever. And I got a little tramp on the back of the audi. Yo. We go to storage. I was like, yo, I need to

the crib. We in the bat were hanging out. A couple of my people's came over and met Danny because I was like, yo, I got an Australian out here, somebody I got. I got an Assi out here, AZZI So yo, So we out here, pigget bourbon, blah blah blah whatever. He's he's enjoying his night. And then it's like twelve one o'clock. And it wasn't even nothing a big deal like that kind of a big deal. It wasn't a big deal. It was it looks like a big deal, look like it on yo hansting. But I was like, I

It was a day, right. I didn't realize that Dan works with Celsius and not far. You can't blame you ain't blaming that on it. No way, no way, four hundred. I was like this,

Yeah, your excuse holding no water that there's zero there's zero excuse that you can blame Dan only was, but there's absolutely no I know Phil craked it up that I know for a fact that I did not, And that was my joke all weekend. didn't get I'm missing a up of bolts for my for my legs. And then I see the bolts at the end of the leg that had the spacers on them that holds the shelf, and I was like, oh, those are it. So I took those out. I put those Okay, let's here, let's start. So if you when you open the awesome, beautiful packaging, there is a very large sand says step one, scan this QR code. You scan the QR code and it opens up this awesome app called Built b I l t this app is phenomenal. I'm not need to say

Then I couldn't figure out the ship shelf was pissing me off. I could figure that out, or the smokestack, Brel, Barrel. I downloaded the app, and this beautiful lady pops up and starts telling me lift lid up, Oh do this, do that, and then I'm fast forward, okay, fast forward next to the shelf. Dude, if you would have done what
you were supposed to in the beginning, this never happens. Yeah, I know, I get it barrel. But back to the hardheadedness. I can put together a grill, but obviously you can't put together a grill. Oh it was good. Flowers here fowers this grill. The excluding what Kyle doesn't know what the hell he's doing. The app, the built app is phenomenal, the build out, the quality of it, how heavy, the legs are great. Everything about this new GMG is stellar, including the assembly,
including the packaging. The assembly follow the app even if you built a million of it. Because there are a few differences, you can both do. Like Kyle taking out random bolts, and we're also gonna throw since we're throwing flowers at people here, we're gonna throw some flowers at Kyle. Kyle says to me. So I went through the tru I might have missed it. I don't know. It's a beautiful. I'm going right now to the built up and I'm going to find out what step is miss and you have the big one or the little one. I'm pulling the big one up right now. They're on the phone. It didn't, okay the old GMG, man, you had to tinker with stuff and like you had to like a couple of millimeters, man, and you'd have a badass hot spot. And I do the mind I saw this online on TikTok or wherever. To do your heat. Do the the toast
test. We heard about this. You take a bunch of breast, yeah, biscuits, whatever, and you put it on there and if one gets really cooked fast, you know, that's your hotter spot. And you're trying to like, you know, dial it all with you know what I use that use an infrared laser. I don't need, yeah, exactly, you could do whatever you want, but you know it's like a little bit here, a little bit there, right, you know, and the old one
it did take a little bit of tink going to get dialed in. Yes, yes, yo, even yo another side by and if you follow the instructions when it says for placement, place at this notch on the adjustment handle for best performance, did you do that? Cop? Probably no yo yo yo. Check it out. Check it out side by side comparison again. I took my bacon wrap ribs right, so they were already cooked. I'm just trying to crisp them up, get them, you know, some color
and let that take four hundred degrees. No, this is before that, this is before that. This is like first wrap. Right. So I got all of these, like you know, pre cooked. I wrapped them. I got one on the old GMG, I got one on the new one. Right. I ran out of the trays with the trivits, so I was putting them on Trivin trays so I could get it even cooked in the yo one by by by yo. I put all of them line by
the line in the new one, no tray right on the grill. I didn't have a second shelf even cook none of them were discolored, from the one that was in the front to the one in the back right yo, the the other one. I had to switch trays around and moved stuff around even cook no tray on the rack. I haven't I haven't cooked online yet, but I don't know. I gotta play with it some more, but I like. I still kind of like the shelf from the old the last
GMG with the front shelf, the one that's got the clicks click. I don't know, I haven't. You know what you know why barrel because he has one of these. He has no he has one of these competition tables that I would have threw out a long time ago. It has the buttons barrel that you got to push in and pull the leg out and almost pinch your fingers doing it right. That's why he likes the stuff that click. I like. I like the click, I know exactly. Friendship is also
another thing that I thought was a really nice little touch. Was it was a simple thing for like strengthening it from flexing that bottom that botto where the GMG plate is, you know what I mean, where it's kind of like a little it almost looks like a little display effect that goes across the back to kind of put it with the legs again. That little piece right there, just keeping it more firm, more more stable. I'm telling you this new GMG is stellar again. And also I'm just gonna say this too.
The only thing that I'm I'm not saying I had a problem with, but I learned this one. You gotta crank up higher than your normal. You gotta cook cotta. You got a cocoder because I think personally, I think because exactly seventy five to seventy five across the gate versus two seventy five before maybe in two seventy five here, but more like three ten three or five. thing down, so you tie onto that and your bending. I was always like, man, I use that as a handle going up and up and down on the truck. I'm dead serious. I used to use that dead serious to get in the truck. Did. But it's not it's not, but you know, I mean, what am I going to grab? I was bending or break it again?
