1 part gin
1 part Pimm’s No. 1
¾ part lime juice
¾ part simple syrup
Mint sprig and cucumber wheel for garnish (optional)
Put all ingredients in a shaker with ice.
Shake to chill and combine.
Strain over fresh ice.
Garnish with mint sprig and cucumber wheel if desired.

1 part non-alcoholic gin
1 part lemon seltzer
¾ part lime juice
¾ part simple syrup
Put all ingredients except lemon seltzer in a shaker with ice.
Shake to chill and combine.
Strain over fresh ice.
Add lemon seltzer.
Garnish with mint sprig and cucumber wheel if desired.
