French 75 (Cocktail)
2 parts gin
1 part lemon juice
1 part simple syrup
5-6 parts Champagne (or other sparkling wine)
Add the gin, lemon juice and simple syrup to a shaker with ice
Shake until well-chilled and pour into glass
Top with champagne

2 parts non-alcoholic gin
1 part lemon juice
1 part simple syrup
5-6 parts tonic water
Add the non-alcoholic gin, lemon juice and simple syrup to a shaker with ice
Shake until well-chilled and pour into glass

Ingredients for next week (cocktail): light rum, dark or aged rum, banana liqueur, blackberry liqueur or blackberry brandy, pineapple juice, grenadine, fresh fruit
Ingredients for next week (mocktail): rum syrup, homemade banana syrup (see below), blackberry juice, pineapple juice, splash of grenadine, fresh fruit for garnish
Banana syrup: Freeze two old bananas. Peel and microwave the bananas in a bowl for 3-5 minutes. Mash, strain liquids into sauce pan and reduce until a syrup consistency.
