I'm your host, doctor Eric Kaplan. Okay, this week we're going to be talking about mastering nutrition. Nutrition is very important. Almost all diseases can come down to proper nutrition. The most common disease that kills most Americans is heart disease. And we're dealing with heart disease,
we have to look at what's called metabolic syndrome. When a patient has metabolic syndrome, what that means is they have too many tests that are at arrange. The tests include high triglycerides. Triglycerides are fat, and we want a lot of fat in our diet. But we want healthy fat, all right. If we have unhealthy fat, your triglycerides mego too high. The fat of you know, steak and meat, that's not healthy fat. So if
we're getting meat, we want to get lean meat. We want to get our fats from the omega threes, the fish oils, we want to get it from some amocado. We want to get it from olives, from walnuts from seeds, coconut oil. These are the healthy fats. We don't want the trans fat like the ones you find in the potato chips, and you know the cookies and the muffins that will lead to heart disease. We want to really stay away from all those inflammatory foods. The big inflammatory foods sugar,
dairy, gluten, corn, soy, coffee, and alcohol. Those cause the most inflammation. Now with certain people, they might be sensitive to night shades. Nightshades are tomatoes, eggplant, peppers, potatoes, So some people get inflamed when they eat those nightshades. There are other people where they're appropriate. For instance, we see a lot of patients with Parkinson's disease. When you have Parkinson's disease, you want to increase nicotine, not smoke cigarettes,
but many foods have nicotine in them. Those foods are the nightshades. So if you do have Parkinson's, you actually want to have tomatoes and peppers and potatoes and eggplant, but not necessarily eat all the seeds, because that's what people can respond to. I have the tomatoes, take out the seeds, the peppers take out the seeds. Those are called night shates. So some people are sensitive to those. Some people are sensitive to lectins. We
find them in some nuts and beans and stuff like that. Some people are sensitive to eggs. Actually, so not everybody's the same, but most people shouldn't eat dairy, gluten, corn, soy, sugar, coffee, alcohol. That is generally speaking, And then as we get more specific, we might have patients stay away from these nightshades or these lectins, all right, they can be inflammatory and cause more problems in your leaky gut. Now, what's a leaky gut. If you have improper nutrition, you can get gut
inflammation. When you have gut inflammation, you get what's called a leaky gut and a leaky gut. What happens is when you have too much inflammation, you have these holes that become too big, and therefore viruses, bacteria, mold, anything, worms, parasites, anything that's not too healthy for you that's supposed to be killed off by your stomach acid or eliminated through your bowel
movements. Now, due to the high inflammation in your body, can escape your intestinal lining, enter the bloodstream and then attack other areas of your body. That's how people are getting basically brain fog from lyme disease or COVID nineteen or epsteam bar. There's all these viruses and bacteria that are normally taken care
of by your immune system. But when you have a leaky gut enter the bloodstream and start attacking other organs, we obviously do not want to have a leaky gut if you have poor nutrition and a lot of inflammation, that's one of the things that can happen, all right, So to heal the leaking get we spoke about this before. There's four phases. The first phase is reducing inflammation. We could do that through risveratrol. That's the best anti inflammatory
and anti aging. Risveratrol comes from Japanese notweed and the skin of red grapes. So what we want to do is bring down the inflammation by increasing risveratrol. We also want to increase too. Mac right tumeric also reduces inflammation. Rosemary reduces inflammation. In fact, rosemary not only reduces inflammation, but it can actually grow hairback. I have patients that actually grow hair back from taking rosemary every day. Cammel, you'd make a cameomel tea much better for reducing
inflammation. Coffee causes inflammation. Camomeal tea reduces inflammation. Ginger ginger also reduces inflammation. You could eat ginger, you could put ginger in your food, you can make a ginger tea, you could put ginger in your smoothie. Ginger is one of the best natural anti inflammatories. Omega threes. These are those healthy fat that's also going to help bring down inflammation. There's so many things you could do to reduce inflammation and decrease your chances of leaky gut.
In addition to reducing inflammation, for that first stage of leaky gut, we also want to have probiotics that's going to improve your gut microbiome. If you have good probiotics, you're going to have less leaky gut, better digestion. So what we want to do is make sure that we bring down that inflammation by not eating inflammatory foods, bring down that inflammation by increasing anti inflammatory foods that will bring down your leaky gut in the beginning of your first stage of
the program. The second phase after reducing inflammation, is to plug in the leaky gut. If we try and plug in the leaky gut before the inflammation is down, then the job is too hard. The way we plug it up is through something called glutamine, and we could do that through a natural shake like a health shake, one of those health shakes that people drink in the morning. Well, we could do it to plug in a leaky gut.
That's only after we reduce the inflammation. The third phase. After we plug in the leaky gut with the shake of the main ingredient glutamine, what we want to do is now kill off all the bad stuff. And we could do this with herbal remedies, anti viral remedies, antibacterial remedies, anti yesede, herbal remedies and die worms and parasites. I call it the atomic bomb. After we reduce the inflammation plugging the leaky gut, now we could
take herbal remedies to kill all the bad stuff. That's the third phase. And the fourth phase is a cleanse where you cleanse your liver, you cleanse your intestines, blush everything out. A lot of people try to do this detox as your first phase. You can't detox before you reduce the inflammation, plugging the leaky gut and kill off all the bad stuff. So we have to do all four things to remedy the leaky gut, because guess what, if you have a leaky gut, then you might have a leaky brain.
And what that means a leaky brain is that the bad stuff can leak into the brain and start attacking your own brain, and that can affect memory, energy, sleep, depression, anxiety, brain fog, troubles with focus, anger, aggression. These are all signs of a leaky gut and a leaky brain. Some people even link this to Alzheimer's disease, where foreign substances are getting into your brain. Whether it's a virus, a bacteria, heavy metals,
these things can enter our brain and attack healthy brain cells. You have lime disease, epstein bar virus, herpes, COVID nineteen, bardinella, mold exposure, heavy metal poisoning. They can all affect leaky gut and leaky brain. I don't know about you, but I want to make sure I don't have inflammation and I can't get these viruses or bacteria that are attacking my brain because we're always going to be exposed to viruses and bacteria. Can't hide at
home expecting you know, your body to just avoid viruses and bacteria. They're going to be exposed all around. But what we want to do is make your immune systems strong. What we want to do is reduce your inflammation. If we could bring down your acidity in your environment and make your environment more alkaline, make sure you have more oxygen, less carbon dioxide. Make sure you have enough water and hydration. Make sure you reduce your stress levels and
get the proper sleep. All this is important in reducing inflammation, preventing leaky gut and leaky brain. I am your host, doctor Eric Kaplan. We're talking about proper nutrition because if we don't have proper nutrition, we're going to get inflammation that's going to lead to leaky gut and a
leaky brain. So if we want to make nutrition really simple, to get all your nutrients, you have to eat each color of the rainbow, something that's red, orange, yellow, green, blue, and purple every single day. If you want to master nutrition, you have to eat eat each color of the rainbow every single day. And if you really want to master nutrition, you eat each color of the rainbow every single meal. Okay, and it could be all just fruits and vegetables. You'll get all your nutrients
from fruits and vegetables. And if you're not getting near nutrients, what you want to do is check your blood work. If you want to master nutrition, you're gonna be on top of your blood work. You gotta see do you have anemia, Do you have a thyroid problem, do you vitamin D deficiency? Do you have magnesium deficiency, zinc deficiency B twelve? Fully, maybe you don't have enough stomach acid. If you don't have enough stomach acid,
then you're not going to absorb your nutrients properly. Most people who are anemic, it's not that they're not eating the foods proper it's they're not absorbing they're nutrients. It's very hard in America to be nutrient deficiency. There's so much food and most people overeat. This is not a third world country where most people, you know, can suffer from rickets or vitamin D deficiency or
scurvy, vitamin C deficiency, certain anemias. You know, a lot of the stuff that we see our absorption issues, digestive issues, they're not necessarily deficiencies and vitamins. So people are going around taking ten to twenty vitamins a day. This isn't the Jetsons where we just want to eat our food in pill form. We have real food, and if you're not growing it on your own, you could go to a farmer's market or the supermarket. You
go to the supermarket. If you want to master nutrition, you only buy foods on the outside of the supermarket. All the crappy stuff is on the inside, and the aisles and the boxes and the cans and the bags, and the packaging and the preservatives and the food dies, and you know, all this stuff that they add into the food to make it taste good, look good, smell good, lasts longer. So even though it might look good, your food might look bigger, might have more color, and it
might last longer. There might be preservatives and food dies. You got to be careful of all these chemicals that are added, artificial sweeteners, artificial flavors, artificial collering. Don't buy fool don't be fooled by some of these companies that say it's all natural when it's really artificial. You got to start reading ingredients. Don't read the label on the outside. You have to read the ingredients. The labels on the outside are marketing gimmicks. They say, oh,
this is gluten free. If you want to be really healthy and really nutritious, not only are you going to avoid gluten, which is found in wheat, rye, and barley. So that's where gluten's found. You want to avoid gluten, but you also want to avoid gluten free. So just because it's gluten free doesn't it make it's healthy. In fact, if it's
gluten free, it's probably unhealthy. You don't see gluten free spinach. You don't see gluten free blueberries because those are automatically gluten free and they don't have to market them as gluten free. People know that they're healthy. So stay away from gluten, Stay away from gluten free products, Stay away from fat free products. They're fat free, then they're probably full of sugar. Back in the twentieth century, as sugar was making people addicted to their product and
people were getting obese and diabetes and heart disease, cancer. You want to avoid cancer, you avoid sugar. Answer loves sugar. Sugars more addictive than cocaine. They did research with rats and literally found the rats would choose sugar over cocaine. Sugar is inflammatory. Now sugar is so bad that they had to come up with an enemy to blame for all these health problems that were occurring in America. And what they did was blame fat. And they said
fat is evil and fat causes cholesterol. And heart attacks and strokes, and they said, we got to reduce the fat. We got to put everybody on these statins. Stating drugs, which are you know, given to reduce cholesterol, can cause a lot of joint pain. If you have a lot of joint pain and you're taking statin drugs, it might be a side effect. They've even linked it to a cause of dementia. So if you notice your brain isn't functioning as good as it used to and you've taken statins,
statins can cause brain dysfunction. But it's the most prescribed drug. Lipator is the most prescribed drug. These statins are prescribed more than any other drug because it's the old model of thinking. Bring down your cholesterol. However, cholesterol is good, especially what's called your HDL cholesterol. It's a good cholesterol. Your best defense against bad cholesterol is good cholesterol. So we don't really care about the total cholesterol being over two hundred in your blood work, but we
look at the ratio. If you're over two hundred, but your HDL is a hundred and your LDL is one hundred and twenty, so your total is two twenty, that's actually good. You have a great ratio. So if I saw that, say, hey, your cholesterol is pretty good, you don't want to take statins, especially if your inflammatory markers are down. Is that what makes you more prone to the heart attack and the stroke. Your inflammatory markers in your blood work are called CRP and E s R. We
want them really low. We want our CRP even less than point three. We want our E s R down closer to zero. If it's above you know, fifteen twenty way too high. It's above ten, that's even too high. We got to be careful. If our ESR are high, our CRP are high, we have high triglycerides, which are the fat, we have high cholesterol, and if we have high diabetes numbers which are found in fasting glucose and hemoglobin A one C in your blood work, So that is
called a metabolic syndrome. If your glucosis high, your hemoglobin A one c is high, your cholesterol is high, triglycerides are high, your CRP is high, your ESR is high. If all those are high, that's a metabolic syndrome and you are in trouble. That's going to make you more prone to heart attack, stroke, cardiovascular disease. So you better start taking action immediately. You better start exercising, You better start getting rid of those bad
foods. The sugar, the wheat, the dairy, the corn, the soy, the coffee, the alcohol. Those are the big foods we have to avoid to reduce inflammation and reduce your chances of cardiovascular disease, reduce your chances of cancer, reduce your chances of obesity and diabetes, and your immune system being off, and dementia and Alzheimer's. You could do it. All these diseases are preventable, but you've got to put in the effort. You've got to work hard for it. But you can do it if you put
in the proper nutrition program. And it's not a diet, it's just living healthy, eating the colors of the rainbow and avoiding those short lists of really bad foods and exercising every day. That's going to bring down your inflammation. That's going to improve your mood, it's going to boost your brain power. It's going to make your hormones better, your thyroid, your digestion, your
skin, everything. And that's how important nutrition is. Okay, Nutrition and exercise and stress reduction are the biggest causes of diseases, and if you are disease, then you have inflammation and you have a high acidic environment. That's your pH. We don't want your pH too low to create an acidic environment. We want an alkaline environment. We want to drink alkaline water, mineralized water. The best way to do that is to just do a pinch of
pinkhamlay and salt in your water to give you the minerals. So if you're hydrated, then your blood flows, your digestion is better, your brain functions. Banner. Imagine if your brain was like a grape and it got dehydrated,

foods to avoid, which foods to make sure you eat. Now it's not only what foods you eat and what food you don't eat, but it's also when you eat. If you want to master nutrition, you gotta master when you eat. And the time to eat is during the day when you need energy. We eat for energy, So why are you going to give yourself all this energy at night when you want to get rest. That's the time
to relax. So most people have their biggest meal at dinner, which is the exact opposite of what you want to do, because at night we don't want to eat. If we're eating for energy, we want to decrease food at night, and we want to eat during the day when we're active, when we're working, when we're moving, when we're exercising, when we're thinking. At night time, when we're supposed to chill out, relax, calm the nervous system down, we don't want to eat because that's going to increase
cortisol, that's the stress harmone. It's gonna interrupt your sleep, it's gonna deposit belly fat, going to decrease your energy and your brain function. So the timing of one we eat is very important. Idealistically, according to the rules of the sun, the best time to eat is ten am to six pm. Those are during the day light hours. Ten am to six pm. That's the best time to eat. That's the solid eight hours of eating. It's called intermittent fasting, where you eat for eight hours and you fast
for sixteen hours. It's also ideal to sleep from ten pm to six am. Therefore, you have four hours from your last meal to bedtime. So if you're done eating at six and then you go to bed at ten. That's perfect. It'll decrease cortisol, which is the stress hormone. So we don't want food at night. That's going to cause you to get up to pee. A lot of people think getting up to peep at night is caused by drinking water at night. That's incorrect. It's actually eating food at night.
It's actually being in stress mode at night. It's actually your vagus nerve not working properly at night. If you're in the fight or flight mode, you're not in the rest and digest. Why are we talking about nutrition and sleep comes from your vagus nerve. The rest and digest. So when you sleep, that is when you break down all your food, your nutrients. You reoxygenate, you rejuvenate, and when you wake up in the morning,
it's healthy to have a bowel movement. After all your digestive food is absorbed. Now we got to get rid of the excess stuff that our body doesn't want. Our body's amazing at eliminating toxins, whether it's through your bowel movements, your urination, your boogers, sneezing, coughing, ear wax, sweating,
bleeding, menstruating, crying. These are always our body detoxes, and if your body's not toxin properly, it's going to come up with a way to get rid of it, whether it's through your skin or throwing up or diarrhea. So if it's not doing it through the normal ways, it's going
to come up with some abnormal way to get rid of these toxins. And if it doesn't do it in an abnormal way, then you're in trouble because then you have these toxins that are stuck inside of you, and that's going to lead to disease and cancer and inflammation and heart disease and emotional troubles. A lot of my patients with pain or discomfort have this pent up emotion in their body and they got to get rid of it, and their physical manifestation
is as a result of this emotional pent up anger entment. Whatever it may be, might manifest into a headache or back pain or neck pain, or anxiety, or dizziness or vertigo, or balance problems or sleeping problems or low energy or brain fog, memory problems. We got to take care of our brains and our body. So one of the best ways to do. That is this intermittent fasting about when you eat. If we intermittent fasting, we're giving our body lots of time to detox and get rid of it. If
we're constantly eating, our bodies can't eliminate. That's why fasting is one of the healthiest things you can do. So I recommend, even it's just once or twice a year, to do a water fast where all you have is water and that's it. And you want to do it where a time where you could relax. So you can't do it when you're you know, working a lot and taking the kids to school and you know, reading, studying a lot. You know, if you have a lot to do, you've
got to have some food on you. But if you could just chill out on a weekend, you don't have a lot of stuff to do, you could just relax. That's a great time to fast. I like to do it, you know, Friday night after dinner, right after six let's say six o'clocks, you're last meal on a Friday night, and then I like to fast till Monday morning ten am. Because if you just do a twenty four hour fast, it's good, but it doesn't do that much. If
it's over forty eight hours, then you're actually creating what's called autophogy. Autophogy means where you eat yourself. Your own cells eat yourself. But what they do is they eliminate the bad, unhealthy cells. You detox. You have in your brain called glial cells, and they detox and they kill off all your bad brain cells and eliminate them. After the age of forty, you
lose about ten percent of your brain cells every decade of your life. Now that's not that big a deal as long as you lose the bad brain cells and you take care of your good, healthy brain cells and you create more connections in a process called neuroplasticity, where you rewire your brain and you figure out where these weak areas of your brain and come up with strengthening exercises to
make your brain function at a higher level. It's called neuroplasticity. Now, how do you find out what areas of the brain are not functioning well? The best test to figure out which areas of the brain are not functioning well is called a q EG. Brain mapping not only will tell you what areas of the brain are not fun but functioning well, it could tell you if you have intestinal inflammation. It could tell you if you have a thyroid problem.
It could tell you if you have a concussion heavy metal poisoning. It could tell you if you don't have enough neurotransmitters such as acetalcoline or dopamine. It will also tell us do you have insomnia, depression, anxiety, brain fog, troubles with anger, aggression, shifting tasks, trouble with motivation, troubles with sleep, troubles with focus, troubles with long term memory, short term memory, working memory, sensory problems, ringing in the ears, floaters
in the eyes, abnormal taste or smell, visual problems. This all is picked up by a q EG brain mapping. To perform this test, you would have to come to one of my offices. also talk about which foods to eat with other foods. So if you really want to master nutrition, you also want to participate in what's called food combining. What food combining is is where you only eat one type of food at a time. Your gut has different enzymes for different types of foods. For example, protein has their own enzymes to break down proteins, so carbohydrates have
other type of enzymes that break those down. If you combine proteins and carbohydrates, then you have two different types of foods, two different types of enzymes, and it makes the digestive process a lot harder. A lot of people just take digestive enzymes for digestive problems. However, that's not appropriate. What is appropriate is to make sure you have certain enzymes that are released when you eat certain foods, and you have other enzymes released for other foods. You
don't want your carbohydrate enzymes trying to break down your proteins. You don't want your fruit enzymes trying to break down your carbohydrates. So what we want to do is eat proteins by themselves. So if you have steak, don't have it with potatoes. If you have chicken, don't have it with rice. If you have turkey, don't have it with bread. Got it. So that's food combining. You have nuts, which your proteins only with other proteins.
That way, the same enzymes can break them down. Carbohydrates, you know, which are the rice and the potatoes, stuff like that that should be eaten only with vegetables. Vegetables help digest all foods. Vegetables can be eaten with protein. Vegetables can be eaten with carbohydrates. Vegetables can be eaten with fruit. But what you don't want to have is, you know, a turkey and cheese sandwich on bread and then have fruit after your sandwich.
That way, you're combining proteins, carbohydrates, and fruit all at the same time. That's not good. Fruit only takes twenty minutes to digest, so fruit is the best appetizer. It's a good thing to have bursting in the morning, easy to break down. And then all I have to do is wait twenty minutes to have a good healthy protein for breakfast. And it could be nuts and seeds, and you know, it can be a piece of grilled chicken or a piece of fish, or you know, it doesn't only
have to be cereal and oatmeal and yogurt for breakfast. We want to stay away from all the typical American breakfast foods pancakes, waffles, French toast, bagel and cream, cheese, toast and butter, muffins, crouissans, frosted flakes, all these sugar cereals, even oatmeal. These are not healthy breakfasts. Healthy breakfasts have a lot of protein, some good healthy fat, that's high energy food for sleep. It's better to have your carbohydrates at night for
energy. It's better to have your fat and protein during the day. So it's not only what you eat, it's when you eat, and it's when you eat certain foods, and it's how you combine certain foods. It's not just about eating healthy. So if you really want to master nutrition, you have to avoid the bad foods. You have to eat the good foods. You have to do intermittent fasting, and you have to do food combining. That's the true master of nutrition. Remember, vegetables you can have with every
meal. You can have vegetables with fruit, you can have vegetables with carbs, you can have vegetables with protein. But for food combining, we don't want to combine the protein with the carbs, or have the fruit after the protein, or have the fruit after the carbs. That's too much for the digestive system to handle, and that causes digestive problems. Instead of taking only two hours to digest your meal, it might take twenty hours because you're combining
all these different foods. Can't tell you how many of my patients have food literally stuck in their intestines. I could feel that it's hard. You could feel the fecal matter if they're not digesting properly. Some people have twenty to thirty pounds of beacle matter in their gut, not even exaggerating it could be
that much. So you got a detox because if you have crap inside of you, then the viruses and the bacteria and the parasites and the worms and the yeast and the mold it could feed on all that crap in there. So we literally have to detox and get rid of all that stuff. That's why fasting is very good. Consistent intermittent fasting and every once in a while a Friday night to Monday morning, complete water fast, detox, get rid of all the bad stuff. Autophagy that's where you eat your bad cells.
That's one of the best ways to heal your brain, to heal your gut. But you got do it in a safe environment because if you fast on your own. You don't know what you're doing, and you go out and you are doing too many things and you're running errands, are going shopping. You can pass out because you don't have your nutrients. You your body's not used to it. Something that your body's not used to. I've fasted so many times, my body's used to it. But if you've never done it
before, you got to be very careful. And it's best to do it, like I said, when you can just rest at home, but everybody can intermittent fast, which is eating ten am to six pm, and then we want to sleep from ten pm to six am. We have to master nutrition. You got to look at your blood work. I was telling you before. I have patients that are taken ten to twenty vitamins. That's not necessary. You got to look at your blood work, see where your deficiencies
are. Right. When you see where your deficiencies are, then you know the appropriate way to handle it. Like I said, most people are deficient because they don't absorb properly. There may be too inflamed or they have what's called hypochlorohydria where they have not enough stomach acid because maybe they've even taken anti acids or tongs or rollaids or stuff like that, or maybe you've taken antibiotics and you've killed off all the good microbiome, all the good bacteria in your
gut. We need bacteria. Your body is actually more bacteria than cells, but we need good bacteria. When you take antibiotics, or you always using purell, antibiotic soap, antibiotic lotion, antibiotic cream, clean everything with bacterial sprays and bleaches, and you're killing off good bacteria. We need bacteria, so you probably need to supplement with probiotics. And with probiotics, that's something that you need to change up all the time. Every two months you want
to take a different type of probiotic. It's not about when they say, oh, this has got a billion bacteria, and it's not about the number of bacteria. It's about the different types of strains. That's the most important thing. So every two months I change my probiotics. To have a good gut, microbiome, proper digestion, and good immune system. Your gut is also your immune system because the acid and the bacteria kill off all the bad
stuff. And if you don't have enough acid or bacteria, that bad stuff lives, and if you have inflammation, that bad stuff's going to enter the bloodstream. And also if you don't have enough stomach acid, the acid doesn't kill off the bacteria. The bacteria doesn't kill off the bacteria. The acid doesn't kill off the bacteria. Then if you have inflammation, it can enter the blood stream and attack healthy organs. That's what happens with leaky gut right.
So that's why nutrition is so important.
