Listeners joined Courtney as she prepared tuna patties and Apple Brown Betty. Tuna patties ingredients: • 4-3 oz. Cans tuna, drained, rinsed & squeezed dry • 1/2 cup flour • 1/2 cup parsley flakes • 2 teaspoons Old Bay seasoning blend, or to taste • salt, pepper, & garlic powder, to taste • 3 tablespoons Worcestershire sauce • 3 tablespoons grated Parmesan cheese (from the green can) • 2 tablespoons Dijon mustard • 2 tablespoons mayonnaise (not miracle whip) • 1 small bunch green onions, finely sliced • 2 eggs, beaten • 2 cups plain breadcrumbs • oil for frying

Apple Brown Betty ingredients: • 2 cans apple pie filling • 1/2 cup brown sugar • 1 cup chopped pecans • 1 box butter pecan cake mix • 2 sticks margarine, melted • cooking Spray • 9x13 pan
