Polynesian Cup
1 oz. Lost Spirits Polynesian Inspired Rum
1 oz Pimm’s #1
1/2 oz simple syrup
1/2 oz fresh lime juice
3 oz ginger beer (2 oz if using a stronger ginger beer like Fever Tree)

Shake all ingredients except ginger beer with ice cubes in a shaking tin. Pour unstrained into a tiki mug or a double-old fashioned glass. Stir in ginger beer. Garnish with a slice of cucumber if desired. Sip slowly in the hot sun.
